You can have Meringue Cookies using 6 ingredients and 7 steps. Here is how you achieve that.
Ingredients of Meringue Cookies
- It's 4 of egg whites.
- It's 1 pinch of salt.
- Prepare 1 tsp of vanilla essence.
- Prepare 1 cup of castor sugar.
- It's 125 g of choc chips.
- It's 200 g of chopped pecans.
Meringue Cookies instructions
- Preheat oven to 140°and line a baking sheet or 2 with baking paper..
- Drop Beat egg whites till frothy, add salt and keep beating till stiff peaks form..
- Add vanilla and sugar and continue beating till sugar melts and mixture becomes smooth and glossy.
- Gently fold in choc chips and pecans.
- Drop spoonfuls of mixture on tray about 4cm apart.
- Bake for 45 mins and then leave to cool in off oven for couple hours.
- Store in airtight container.
