- You need of Beetroot (2-3 large beetroot).
- It's of Sweet potatoes (2-3 large).

- In oil of choice(I used scented coconut oil) onions place onions,spices, chilli, garlic&ginger allow to simmer and mix in to flavour.green chili, garlic, curry leaves, curry powder,turmeric powder, cayenne pepper, soy. Mix well to combine..
- Cut beets (I did cubes) one could do slices or grate it, cut butternut (slice to your choice).
- Mix it in and slowly add coconut milk and water on medium heat, Heat the saucepan over medium high heat, while stirring occasionally, until the coconut milk/water comes to a boil. Reduce the heat to a simmer, and let it cook covered, for about 3 minutes or 5.
- Uncover and cook for a further 5 - 10 min_ stirring frequently depending on how you like your beets and sweet potato_Also The cook time will vary depending on the thickness, sizes and desired texture... If the liquid is evaporating too quickly, you can add more water or coconut milk..
